According to the 2020 census, the population of Huntington was 200,907 making it the 74th largest city in New York. The town has seen steady population growth over the past several decades. Since the 2000 census, the population has increased by 3.7%.

The racial makeup of Huntington is predominantly white, making up 79.5% of the population. Hispanic and Latino residents make up the second largest demographic at 14.4% of the population. Black residents make up 5.8% of the population, Asian residents 4.5% and all other races accounting for the remaining 2.6%.
